Bistro du Vin 25 May 2019 - Michelin Bib Gourmand Singapore 2019




Last Saturday saw us triapsing to Bistrot du Vin at Shaw Centre to try some of their famous hearty French fare. We arrived at the Shaw House bistro before 7.30 and I managed to get a car park lot at the opposite Pacific Plaza Building which was a bonus.

Light Mousseline Sauce (very refreshing !) 

For the starters we tried the White Asparagus with Light Mousseline Sauce which was in one word - fantastique - the asparagus was crunchy on the outside and tender on the inside and not at all bitter like those small asparagus shoots we get from the supermarket. The Mousseline sauce was very creamy (probably with alot of milk and butter inside) and was a great accompaniment to the asparagus. Excellent start to the meal.

I chose a glass of Granache which was a very mellow red wine to go with my main, which was the Beef Cheek (see below).

The wait staff were very professional and friendly, the seating was in a common hall and the specials were written in chalk on a huge blackboard at the top of the restaurant. I selected the Beef cheek, which is a specialty of the bistro while my wife May ordered the mixed stew of sea bass, golden snapper, prawn and squid. She gave it  a "thumbs up" and it was full of flavour.

The mixed stew was hearty and flavourful, she was impressed by the rather large pot and the servings were ample for 1 person. The flavour of the stew is strong and reminded me of the similar types of hearty stews when we went to Nice France last December. 

The beef cheek was really tender, it practically took no effort to cut through the beef and it was layered with a thick robust tasting sauce which reminded me of Bovril (?). The mashed potatoes were so tender and almost milky, I avoided it owing to my high cholesterol condition. Garnishing of chopped small parsely and carrots made the gravy so tasty. The beef cheek was a winner for me.  




Roasted Loire Pigeon with Girolettes and wild asparagus 

My elder son had the pigeon with girolettes (I guess some mushrooms) and wild asparagus and he found it rather gamey with a strong flavour much like pheasant. I tried it and it tasted lovely as I like strong tasting food. Goose Liver, cheese aged 36 months, etc all I do fancy and I would eat these more often, only if I had't my cholesterol to manage. That is Life, some wonderful tasting things are forbidden and I have to respect that.

My younger son had the Steak Frittes Oconnot Beef (marbelling 4) medium and was not too enthused ; it was rather ordinary. 

All in all a nice hearty meal for 4 , I will not give a review here as only those who are into French food and all its richness will truly appreciate trying the Bistro du Vin coupled with a nice Boujalais,  two or three.

Great Advice from the Motley Fool, Mr. David Kuo ; 4% rule upon retirement.

Here is some great advice from the financial adviser who goes by the moniker of "The Motley Fool", Mr. David Kuo. 

The 4% 'rule' is a guesstimate on how much interest your savings is expected to earn you yearly if you want to retire comfortably, ie. living with perhaps 70% level of your last standard of living if I may be able to quantify it. Lets say you want to retire with an 'outflow' of your savings yearly of $50,000. He suggests multiplying that amount by 25 so you need to have saved (ideally through rigorous savings, investment gains, business gains and inheritance) approximately $1.25 million. 

If you do not want to downgrade your existing property, then that amount should be kept in liquid assets. He estimates that these savings earned annually should appreciate 4% if it is still being continually invested wisely in a mix of equities, bonds, some cash and maybe a spare property or two. 

Bear in mind inflation of 3% annually will eat into the interest, so his company The Motley Fool will aim to earn upwards of 7% so that the savings saved is indeed kept intact and even growing through these uncertain times of US - China Trade Wars, the slowing down of our economies as we struggle to adapt to the new ways of doing and managing business and our lives are intertwined inextricably with our jobs, work and our companies.Our families should always be the reason we are existing, but our life's work if it can be quantified, should stand the passage of time. Our legacy is ours to create. 

Retirement can be optional, but the mind and body slowing down  and going to a funk is inevitable, but we can slow the process down by rigorous exercise, proper choices in food, living in clean environments and even taking health supplements like I do and have done so for the last 14 years without stopping.    

Another point to note is that you (and I) should be very well insured for all kinds of potential mishaps which require hospitalization fees, loss of earned income, and the slow loss of mobillity - whenever that strikes, it comes very fast as I have seen with close and dear friends recently.

Money, while it is necessary for a good life, doesn't necessarily lead to a good death, hence the thinking I have currently is to help the less fortunate people while I still have the energy and means to do so. That act itself will open my views to experiencing and maybe having empathy for those truly in need.

Death comes in whatever form, so be prepared for it, mentally,financially and physically by accepting the changes that will inevitably occur in time.  

Sushi Kou - Great Sashimi and Excellent Service

Our family have frequented Sushi Kou at Orchid Hotel along Tras Street for 3 years now. That in itself is a feat given my wife's extremely high standards in wanting to eat tasty, clean food and with the requirement of a changing menu every few months. Never an easy task.

Located along the walkway of the Orchid Hotel along Tras Street, the establishment is helmed by a Mr. Anthony Tan and his fine crew of 3 chefs and 3 serving staff.




Piece de Resistance, Sashimi 


Sushi Kou's sashimi always is excellent. The fish is freshly flown in from either Hokkaido or Tokyo's Tsujiki market and we normally order the following types of fish which never disappoints.

- swordfish
- tuna belly (otoro)
- scallops
-sea urchin (uni) ; the edible part
- salmon belly

Lately there has been in season fresh oysters, so we normally have a couple per person

Sushi Kou's boss Mr. Anthony Tan makes it a point to always seat my family even when they are quite full, so I am most appreciative of his support.

California Maki 

Depending on what we order, the bill per person easily comes to S$60 and above per person (including a couple of glasses of beer at $6 per glass). Our family of 4 normally has the following, starters of sashimi and whatever else is in season like oysters, some vegetable tempura , grilled cheek of flying fish or yellowtail.

Next, we will have the sushi which is normally the stamina rolls (soft shell crab), unagi rolls and perhaps California Maki.

For the young men in our family, they will then order a side dish of a (beef or pork ) katsu don, followed with some miso soup.


To round off the meal, we will normally order each a scoop of ice cream which is not too creamy and with their typical Japanese flavours ; 1 of each so 4 to share amongst the 4 of us.

So my review with the scores below :

1. Food :  4.8 / 5 

Very fresh fish ; tasty choices and fully satisfying

2. Service : 4.9 / 5  

Almost Full Marks again, Mr. Tan and his crew must be commended for application of Ikigai or the art of focussing on the small tasks and creating the right dining mood for us.

3. Ambience :  3.5 / 5  

Some let down as the building is old and there were times when the air conditioning (HVAC) vent system didn't function properly. Fortunately they had the presence of mind to use high powered fans to enhance the cooling environment.    

4. Price        : $$$       ;
Be prepared to pay $ 60 - 80 per person if ordering sashimi, which is their speciality.

POFMA should not stifle constructive criticism

The recent Bill called Prevention against Online Falsehoods and Manipulation Act is a well intended one.

My key wishes for this bill and now enacted law is that the actions carried by the Government of the day must be fair and balanced, as must the actions, posts and comments of thousands,no millions of blogwriters, people who have FB accounts, Instagram accounts and even Whatsapp accounts to exercise due restraint when posting articles, and so called "news". 

There are so many ways to 'spin' or 'frame' the event so much so that the type of language used, the facts presented, the audience the article or post intends to reach out to, and the expected response or impression created must all be well thought through. 

The spreading or passing of so called 'news' I normally check and double check the source of the 'news' for a) history b) credibility and c) ensuring that there are numerous other news outlets reporting the same event before I consider even passing the information on. If I think there is something dubious or that the 'news' will spark some unease, I will hesitate and probably not pursue putting up that post. It is obvious the more factual and unbiased new sources would be the BBC, Agency Press France, NY Times and South China Morning post although these sources also have inherent 'biases' in their articles from time to time.

Coming to the social media. This not so new media, the open sea, where there are bad people with all kinds of dubious intentions. We need to be very mindful of what we are posting, who the target audience is and what are the ramifications if any if there is indeed bad intent. 

I for one, will not be afraid of the POFMA, as if  it is executed properly, is a good check and balance of the multitude of news and so called facts there both for and against the establishment. 

There is also some doubt that the Government of the day may themselves use this as a means to stifle constructive criticism against their policies. I hope this is not the case.

What a time to be a Wolves Fan 

My 'goldfish' have made it to Europe's 2nd tier competition. Wolverhampton Wanderers by virtue of finishing highest in the Premier League at 7th outside the top 6 teams and with Manchester City winning the FA Cup, this ensures their qualification.

There has been no better time than to be a Wolves fan, since I followed them in 1976, over 42 years ago !

We can only benefit and see more of the Wanderers in the coming year. 

Let their success reflect the once again renewed optimism at the town and their followers all over the world.

Heuristics - Subconscious Learning

Reading from this wonderful book called "The Art of Thinking Clearly" by Ralf Dobelli there are many lessons which I can vicariously learn from reading and one of these is Heuristic Learning, which is learning by life experience.

To really sequence logical decision making, he states that if we are given 2 choices to make, then logically each and every one of us will need to go through the "fork" or Pro and Con options in the mind using mathematical models, the net gain or loss from the Pros minus the Cons (of course if the Con is subrtacted from the Pros), and the final NET GAIN from either pathway is logically the Action to Take or No Action is required.

Shall I have a snack now (its 11.00 am)  ?  I had a nice Oden dinner at 7.45 pm just now.

Hence Heuristic learning comes into play and the more we interact with people who have 'been there done that' the better our chances of taking the right decisions in every phase in our lives.

That is why there are so many Life Coaches and Gurus offering everything and anything from losing weight, improving your life, your career, your financial situation, your looks and what not.

In addition, for people who have little life experiences, then there are the myriad of Self Help books out there to follow and adapt ; but be warned, each and every person's life experiences CANNOT BE USED 100% as a guide for the person reading it.

Lam Charoen Seafood - Siam Paragon Bangkok 15 May 2019 Review


Deep Fried Seabass with Special Fish Sauce - Laem Charoen Seafood 

During this last trip to Bangkok, my associate and I made a visit to the Lam Charoen Seafood restaurant located on the 4th floor of Siam Paragon, Bangkok. Fresh from an upcountry visit, I was famished and we ordered their signature deep fried seabass (THB 900 for 2), the Steamed Cockles, Morning Glory, Tom Yum Prawn soup (spicy) and 2 bottles of Singha beer.

Fortunately, the dishes arrived very quickly, and the signature seabass was really crispy and tasty, perhaps too much for 2 persons, but for 2 starving men it was just right. The meat was crispy outside, and the skin as well as most of the bones are edible and cruchy which makes the dish all the more appealing.

The balance of the ice cold Singha beer reduced the heatiness of the fried fish. I would recommend drinking something cooling with beer with these dishes in all honesty.



Steamed cockles 

I am not a cockle fan, but my business associate was a bit wary of eating too much, and he felt it was rather stale as compared to the very fresh ones. I on the other hand, took a couple with the sweet Thai chili sauce and it was acceptable. 



Tom Yum Soup, with lots of chilli and spice. 

Another winner for me was the Tom Yum Soup and we both had at least 2 - 3 bowls each. The prawns were fresh and very 'al dente' to the bite. There are actually 2 types of Tom Yum Soup, the clear type which can be very deadly as the 'kick' of the chilli padi inside the tom yum can cause a lot of distress to stomachs untrained to the spicy Thai dishes.

This Tom Yum was a lot like a spicy curry sauce but without the coconut flavour. The tanginess or 'asam' flavour is apparent and it was great to pour it over rice and eat it. Yum ! 


The Morning Glory 

This vegetable is native only to Thailand for some reason, but it tastes like our Kang Kong (a variation of spinach) but more crunch at first bite. It tasted very fresh and stir frying this with their ubiquitous fish sauce with some garlic thrown in and you have this dish.



My ratings (No compromises) :

Very Good, with the Cockles being the only let down if that

Very Prompt and Attentive ; Fast on the serving side.

Ambience                       : 3    / 5   
Situated in a Busy Walkway on the 4th Floor, not the best for small talk.

Football is the Opiate for the Masses.



Watching my Goldfish merrily swim around has the same effect as watching my football team from England. 

What a strange linkage, but that is my assertion. Watching the team calms my nerves when they do very well and for some unexplained reason, the wins create some sense of fulfillment which only religion can match.  

After following one season of my football team, Wolves, I can declare that football is the new opiate for the masses, where the players are held in almost religious esteem,they can do no wrong,something akin to the Saints of old and the managers are like the Pope. 

The folks in many parts of England are so football mad that they will christen their kids after their favourite footballer and even want the hymns in their funerals to incorporate the football chants of their boyhood till old age hood idols to the afterlife. 

I find the adulation and idol worship rather unbelievable and very amusing and as a new supporter coming back to the game, I am fully mindful that at the end of the day, it is only a game, which requires the support of the fans, and most importantly the financial revenue from the ticketing and merchandise from these said fans so that can the club show profit.

Winning promotion to the Premier League guarantees them quite a bit of money in terms of TV viewership fees from the TV stations and to be in the top 6, the teams easily earn over 120 million pounds in TV revenue from the main stations, EPL and Sky which in turn sell the rights over to Singapore whose main service provider is Singtel and I have it cross-carriaged to my StarHub channels. 

The dues are almost $70 just for the Premier League, there is separate fees for Champions League and Europa League, so its a money spinner for the teams just to make it to the English Premier League.

Back to the football teams and their fans. It is good that every week (at least for 10 months of the year at least), the people can 'pray' and wish for a good result from their idols, something akin to having their simple wishes fulfilled and they will be happy as the reflected glory from winning top Cups and Titles from their favourite teams makes them clamour for more of their next season's merchandise, and sometimes many a dream of a fan is to go to the Old Trafford, Anfield and Emirates Stadium to make a 'pilgrimage' just to walk the hallowed grounds of the almost holy. 

To me, my boyhood team was the stuff of my boyhood dreams. My current Wolves team gives me joy similar to my goldfish when they swim (play well) in the water feature outside my house.

Watching them is similar to watching my goldfish, strange though it may sound. The players will be admired from afar and they lead far different lives from us, as they are living in a different ecosystem altogether.

Remembering my Mum on this Mother's Day - Love Her so much

On this Mother's Day, I would like to spend some time reflecting on my wonderful mother, Anna, who during her lifetime helped so many people in their times of need. She was a wonderful mother, always wielding the rod when necessary (I was the painful recipient of it all the time but it worked in keeping the 2 mischievious boys under control) and buying us our favourite dry Beef Hor Fun from the same stall every Sunday after her swim and badminton game at the Singapore Swimming Club.   

Her financial acumen was superb, making great returns in property, shares and overseas property. Ever the matriach, as she was the eldest sister of 4 sisters and 2  brothers, she literally brought up the family with Por Por when they came to Singapore dirt poor in the 1950s. She was there when we were sick, giving us love, emotional support and arranging for the best medical care and service to attend to our (thankfully) minor ailments.

She gave us the best there was to give sacrificing her year end bonus for John and I to go for overseas holidays in our University days, these holidays while they were so enjoyable, opened our eyes and gave me a perspective of our country, its short history and its progress since it gained Independence in 1965. 

She was the doting grandmother to Noel, Andrew and Hannah and in her later years, she was such a great provider to many people in their times of need, providing financial, emotional, advice as an aunt, and so many more things. 




Mum, you are greatly missed 

I made time with her at the occasional lunches at Cricket Club, had several visits overseas to Malacca, Kuala Lumpur, Penang and Bangkok, she doing her shopping and spa and generally having a great time.

She really took care of Papa, Johnny and me. Mum, I want to say the biggest THANK YOU for you gave me so many life lessons, like picking myself up when I fall, staying the course and always be pleasant to everyone around me, whether they are CEOs or the poorest vagrants. People have their human dignity to uphold.

English Premier League Title to be Decided next week Sunday 12th evening 10pm


This is the penultimate match for the top 2 teams. Liverpool are 2nd in the league and they face off with Wolves, while the current Champions, Man City will be away at Brighton.

Both are high stakes, though Wolves will have nothing to prove having established 7th place and can only wait till the FA Cup final to see if Man City does beat Watford. If they do, then Wolves qualify for the Europa League which is the 2nd tied competition while the top 4 places compete in the Champions League. 

The top 4 are likely to be Man City, Liverpool, Tottenham and Chelsea.

5 and 6 are likely to be Man Utd and Arsenal 

My prediction ? Wolves to stun Liverpool 2 : 1 at Anfield.

Lets see. 

The proud Wolves who last won the League Cup in 1980, almost 40 years ago with next to nothing to show for it.

Boiled Egg with Green Tea Flavouring 

This is the second post as promised earlier. The Oden is really light in flavour meaning, the food is pretty 'clean' and healthy. There is very little oils, and added flavouring hence people who are health conscious will find this a big plus. The ambience is very Japanese and the food generally is in relatively small portions.

The boiled egg above has the right texture in it, meaning, it is not overly boiled and quite soft to the touch. The green tean shavings gives the perfect nuance to the somewhat ammonia type flavour one gets when eating boiled egg.



Baby Corn 

The baby corn was crunchy and with a slice of lemon on top, it was in my opinion rather bland and nothing out of the ordinary.

We aim to to try the claypot with pork and other ingredients inside during our next visit.

Their sake selection is very wide and though I am not an sake afficiando, I believe many sake lovers converge there just to engage in their favourite tipple and then move off to their next location.

Einstein being a scientific genius is attributed to this statement above. He was a below average student but somewhere during his work days, he had time for himself and wrote the Theory of Relativity and the rest they say is history.

I would like on focus on one's stupidity. We are by nature, an egoistic species. But that very ego, that worship of self, often leads to one's downfall. For example in a fight, flight or fright situation, only the truly stupid or confident in their own abilities will stand their ground when presented with this scenario if confronted by the threat before them.

So, do carefully consider where you are in your station of life. Many times, only when the decision is made, time determines whether you were right all along or you had committed an act of utter stupidity.

Oden - Japanese Broth Clean Food - KAMOSHITA Review 27 April 2019


Boiled Pork with Small Clams Oden 

Oden is a type of Japanese comfort food, so my wife and I decided to try 2 outlets over the last 2 weeks and I am happy to report that the first one we went on 27th April 2019 (Sat) was up to expectations. Basically the broth is kept in a large copper like tub with lots of ingredients and boiled for easily 4 hours. Here is the review from KAMOSHITA located at 5 Neil Road, in a small unobtrusive shophouse with seating of 25 and 5 serving cum cooking staff. 

Straight to the main dish, to get the oden taste absolutely correct, the chef needs to taste a little each portion he serves and adds additional condiments to the ingredients before serving to the customers.

Our favourites are as shown in the pictures above and below. The boiled pork with clams, chopped spring onions, tomatoes and some secret ingredients was really tasty. The pork was slightly fatty and so tender, testament to the long hours in the oden pot.The clams were small and 'al dente' or chewy to the first bite, just as I like it.



Melt in your Mouth FishCake 

The fishcake had the texture of boiled carrot cake, for those who know what carrot cake is like, it is so soft and tasty, full of flavour and very nice. The bowl was kind of like a throwback to the bowls in my childhood days in St Andrew's primary school ; they are 'aged' in appearence to give that earthy and well used look. Top marks for taste, although the presentation is very subjective. 


Radish with mint spice 

The radish was firm and good to the bite. On top of it, there were some Japanese condiments like seaweed and mint which was quite novel. The broth was heavenly to say the least.

Really good and authentic Japanese Oden with Japanese proprietors and staff. They had a massive selection of Japanese sake in huge bottles.

Ambience : 4.5 / 5  
Spacing was ample and they only could do 1 'turn' for the night, not too many diners packed inside the shophouse restaurant which was minimally furnished.

Service     : 3.5 / 5  
Very shorthanded ; only 4 serving and cooking staff in total, including the boss. The pacing of the food was very long drawn due to the lack of kitchen staff. The lady server was Japanese and tried very hard to please but they had too much intricate small tasks to do with too few people behind the counter 

Price       :  $$$$   
$166 for 2 pax (with a premium cold sake). No GST which was a surprise. 

Total        : 12 . 5 / 15 or 4.2 over 5 stars 

Will we go back again : Yes. For the food ; We hope they can survive the cutthroat Food and Beverage Business in Singapore which has numerous top quality food at short distances from one another and with sky high rents for central locations, very adverse hiring conditions (very difficult to hire foreigners and only Singaporeans and possibly the business owners who are Japanese or must can work), it is a tough call for them to survive let alone thrive.

  




My Once in a Lifetime Moonshot - Paris Marathon 2020

My Moonshot has been postponed for the last 3 years.

I wish to put on record that I am a procrastinator when it comes to achieving my dream goals.One of these is to run the famous Paris Marathon. I have been putting it off for the last 2 years at least since 2017 and it is already May 2019 and I have STILL NOT done it.

I will be 57 end of this year and I had better make the necessary arrangments to 

1. Get fit and with still strong stamina  (4 hours 30 is mt target)
2. Get my family's blessing that I can be away for 5 days
3. Arrange for my stand-in for my business during my absence.

I mean to achieve this Moonshot by hook or by crook, so watch this blog for more updates !
